Culinary team from Corrida and Oak opens newest restaurant in Boulder

Around: The restaurant is the latest venture from Half Eaten Cookie, the restaurant group founded by Bryan Dayton, the chef behind the acclaimed Oak at Fourteenth, Corrida, Bellota, BriDer and C Burger. The Colorado Club describes itself as a “neighborhood saloon and grill.”

The 3,200-square-foot space seats 88 people and is “an homage to the Western frontier” with “rustic decorative elements such as taxidermy and photos of old-time cowboys smoking cigarettes,” the owners said in a statement. There are also eight televisions. In the fall, the Colorado Club will open a speakeasy-style bourbon bar on the lower floor.
