HERMANTOWN, Minnesota – After a trip to Texas a few months ago, the owner of Famous Dave’s got some tasty inspiration.

In July, the restaurant roasts a whole pig every Wednesday evening. After 4 p.m., guests can come by and taste the fresh meat straight from the grill. Everyone gets a good portion of pork and a few side dishes.

The pork is prepared with a special sauce and smoked over hickory wood for about 11-12 hours, which gives it that classic barbecue flavor.

“But when you bring all those flavors together with the smoked bacon and the roasted bacon that’s in here along with the other cuts of meat, it really brings out a whole bunch of flavors. When you have them here, we take a little bit of each part of the pig, chop it up and mix it together. So you really get a nice, flavorful bite of the product. You really see that it’s more than just eating one serving, and one serving, but that’s not great, but it’s just nice to have them all together in one presentation,” said Greg Toon, owner of Famous Dave’s in Hermantown.

Famous Dave’s also offers whole suckling pigs for catering events. The pig feeds 75 to 100 people, so stop by on Wednesday nights while supplies last.
