Behind the scenes of RingSide Steakhouse’s famous onion rings – This is Oregon

If you’ve ever wondered where to find the best onion rings in Portland, you’ll generally assume that RingSide Steakhouse has by far the most famous ones.

On the menu, onion rings are listed as the first option among the appetizers and are considered a house tradition. Directly below is a quote from James Beard: “The best fried onion rings I ever had in America.”

The Oregonian/OregonLive recently stopped by the steakhouse to see what goes into making the popular fried dish.

We spoke to Albert Spor, a sous chef who has worked at RingSide for 47 years. He has seen a lot during his career there, but one thing has remained constant: Customers love RingSide’s onion rings.

“We use about 1,000 pounds of onions every week,” Spor said.

Of course, the process of making onion rings has evolved over time. After being breaded by hand, the onion rings are now evenly coated with flour by a machine, which carefully turns them over and prepares them for breading.
